I have to say that I was very skeptical about this pairing. I love Rosé; and there are so many unique and interesting varieties from all over the world. Recently, I have been enjoying the more crisp, light versions from Italy and Provence. Light doesn't mean less flavor though. The Rosés from these areas have tons of flavor but many of them have more acid so they are better with food. The addition of jalapeños actually accentuates the flavor profile of the wine but the acidity is still present. You can add the jalapeño slices to taste but I suggest starting with a few.
